Chow

Chow is eaten by more people in Trinidad than probably any other dish. Its also very versatile. Basically its a fruit or vegetable seasoned and eaten as a snack. The best known is mango chow I guess although if you are in Trinidad then pomcythe may be equal top billing (golden apple a local fruit). The recipe below is for mango chow, but it can be adapted to, cucumber, pineapple (very good), in fact any firm fruit, I've never had unripe banana chow but I bet it would taste ok. Apple might be good if it was a tart apple. Of course put it on chopped tomato and its a type of salsa.

1 unripe mango (hard to find in UK but keep trying you want one that when you press it you cannot get any give.
pinch of sugar
pinch of salt
pinch of ground black pepper
pinch of chopped hot pepper
desertspoon of chopped fresh coriander
squeeze a lime over and mix by hand.

Best left for 30-60 minutes for flavours to develop.
eat as a snack before meals or anytime.
